Protein Pumpkin Overnight Oats

I’ll keep this post short (and sweet). Now that fall is officially here and ALL the pumpkin things are happening, I always have a can of Organic Pumpkin on hand, opened and ready to go. This is an easy breakfast and especially good for those who are on the move!
In a mason jar:
1/2 cup Silk unsweetened vanilla almond milk
1/4 cup steel cut oats
2 tablespoons of canned/pureed pumpkin
1 scoop of vanilla whey protein powder
1 teaspoon of chia seeds
A dash of pumpkin pie spice
Cacao nibs to top (optional)
For best results, refrigerate overnight, at least 8 hours. This can also be done with regular rolled oats!
