Ginger Energy Bites- GF, Vegan
I have been seeing a lot of protein and energy bite/ball recipes lately. Many of them contain peanut butter and chocolate chips (which I am a big fan of both), but I wanted to make something that had more of a “kick”. The taste isn’t overwhelming, but just enough that it reminds me slightly of a molasses cookie or gingerbread. The best part though- the fact that this doesn’t require an oven. Quick and easy enough to add all ingredients in a blender and have them whipped up in five minutes. This recipe is vegan, gluten and dairy free. I found all of my ingredients at the grocery store- the Trader Joe’s Almond Meal is a game changer. You could definitely pulse up whole almonds in the blender, but for me the almond meal gave it a smoother texture! I should also note that the base (dates, almond flour and coconut) is versatile enough to make other flavors. I would imagine lemon would work nicely, or even cinnamon.
Makes 10-15 bites, depending on how small you roll them.
Ingredients:
10 pitted medjola dates
1/2 cup almond flour (I use Trader Joe’s Brand Almond Meal)
2 teaspoons of ground ginger
dash of Himalayan pink salt
1/2 cup of unsweetened shredded coconut
2 teaspoons of water
Directions:
Using a food processor (or blender- I used my Ninja and it worked great!) add all ingredients and pulse until items are finely chopped. Continue to pulse until ingredients form into a thick paste consistency. Spoon out the mixture and roll into one inch balls. I stored mine in a tupperware and kept in the fridge, but they can be frozen as well!
